Charlie's Sausage began at Two Run Farm, a mixed crop and livestock farm in Vaughan, Mississippi, and over the years we have raised beef, lamb, goat, pork, vegetables, and cut flowers. Today our specialty is slow-smoked wild boar and pork sausage made in a custom wood-fired smokehouse. Our Charlie’s Smoked Sausage is available in stores around Louisiana!

Our Process

Charlie is a guy who loves the forest, wants to help nature, and smokes delicious pork products to make that happen.

Around our area, the longleaf pine forest, a beautiful forest with high biodiversity that thrives with natural fire, is being disrupted by the rooting of wild pigs. A part of the solution is a humane trapping program to harvest the wild boar, restore forest ecology, and make smoked meat products to drive the initiative.

We're Smokin' for a Change

At Charlie’s we hope you will enjoy grilling and cooking, and enjoy the outdoors. It’s here for all of us, it’s beautiful, and it’s free. We are also hoping you don’t get too worked up about the politics of the outdoors. Know what I mean? Stressful. Just kick it with a beer and a link of sausage, and then go fishing or something.

Our key ingredient is wild boar, and our key products are smoked sausage. Both are produced at our farm and plant in Springfield, LA, with an innovative smokehouse we designed and built ourselves out of stainless steel to express the artisanal process of traditional Cajun meat-smoking. All our product is made using real oak firewood from an actual wood fireplace, and uses some humanely raised and locally sourced ingredients. Yes, sometimes Charlie kills the hogs himself.

Whether you are a redneck or a hippie, we try to be ok with you. Charlie himself is kinda both. We would like to celebrate rather than challenge traditional Southern crafts and values, like hunting wild boar, farming, forestry, and smoking meat. We are a little eccentric for this part of the world, but we love our product and we hope you respect our values. We want to speak to Louisiana as loyal natives proud of our heritage but welcoming change, and to the world as chefs from a rich culture, but in tune with modern urban sensibilities. Like the Foxfire project or the folk music revival, we hope to stand for good ways of being and respect for Southern traditions.
